Serving Size 4-6
Ingredients:
1 large zucchini or 2 small zucchinis (chopped in cubes)
1 cup shredded cheese (Monterey jack preferred)
2 Roma tomatoes or 1 large Beefstock tomato (diced or chopped)
2 cloves garlic diced
1-2 tbsp avocado oil or ghee
Heat 1 tablespoon of avocado oil or ghee on medium heat in a pan. When fully heated (I usually look for the smoke point), add in the diced garlic. Just before the browning point of the garlic, throw in the tomatoes for 4-5 minutes until tender to sauté. When tender, add in chopped zucchini and cook til soft (generally 4-5 minutes). Top at the end with shredded cheese and serve!
This recipe is perfect as a side to any home cooked meal.
